Crispy Tortilla Shells with Chorizo Mac & Cheese

These little treats are perfect for a movie night or light snack, and again the filling can be made well in advance and refrigerated. Try with a couple of bottles of our Victoria Beer, well worth a try.

INGREDIENTS TO GET READY
4 x Tortilla Shells
200g Grated Manchego Cheese
150g Macaroni or Penne Pasta
40g Jalapeño slices (finely chopped)
100g Chorizo Vella Extra (finely chopped)
200ml Cheese Pasta Sauce
2 x Spring Onions (finely Sliced)
1 x Generous Pinch Sweet Paprika
2 x Spring Onions (finely Sliced)
2 x Large round tomatoes 1/4 and de seed
PUT IT TOGETHER
1. Cook the Macaroni in rapidly boiling salted water till it is al dente, drain in a colander but do not refresh.
2. Once drained place the pasta in a mixing bowl, add the pasta sauce ,diced jalapeños, spring onions and grated Manchego cheese and Paprika mix well.
3. Cut the tomato segments into small dice and fold through the pasta mix finish with the chopped Chorizo.
4. Divide the mixture between the pasta shells, and place in a pre heated oven 180/200c for around 15 minutes until the macaroni is golden brown and bubbling hot.
