- INGREDIENTS TO GET READY
- 400g Large Baking Potato (3no)
- 150g Grated Manchego Cheese
- 1x Generous pinch Sweet Smoked Paprika
- 20g Chives (finely Chopped)
- 1/2 tsp Chilli Flakes
- 1x Egg yolk
- 2x Large Spring Onions (very finely sliced)
- 200g White Tuna Fillet
- 2x Large eggs
- 50ml Milk
- 200g White breadcrumbs or Panko
- 200g Plain flour
- Frito Mayonnaise
- 200ml Extra Thick Mayonnaise
- PUT IT TOGETHER
- 1. Wash the potatoes and place on a baking tray in a pre heated oven 180c for approximately 40 minutes or until they are cooked through. Once cooked remove from the oven, cut in half and allow to cool for 5 minutes
- 2. Once the potatoes have cooled a little, scoop the flesh into a bowl, break down to a coarse mash, add the cheese, chives, spring onions, paprika, egg yolk - mix well
- 3. Flake the white tuna into the mix, mix well until firm and tight
- 4. Season the mix to taste, divide into 12 even balls (30g each) wearing lightly oiled latex gloves will make this easier
- 5. Using the palms of your hand form 12 firm tight balls
- 6. Whisk eggs and milk together to create an egg wash, pour into a shallow tray and have a tray of flour and a tray of bread crumbs
- 7. Roll the balls through the flour making sure they are totally coated, same through the egg wash, and finally through the crumb
- 8. When all the balls are breaded place on a tray and allow to chill and firm in the fridge for at least 1 hour
- 9. Pre-heat a deep fat fryer to 160c, once at temperature add the croquettes and fry until crisp and golden brown. Once cooked through drain on kitchen roll and serve immediately whilst still hot, with lashings of Frito mayonnaise
