Papas Arrugadas – Canarian Salt Potatoes (wrinkled Potatoes) with Red Mojo Sauce

Once again this to the Canary Islands is very traditional Tapas and often served with both Red and Green Mojo Together, so simple but very moorish you will certainly need something chilled to accompany, try one or two of our Victoria Malaga or Daura beers - you wont be disappointed.

INGREDIENTS TO GET READY
400g Baby New Potatoes
2 Dessert spoons Table Salt
800ml Water
Juice of 1/2 a Lemon
80ml Mojo Picon
PUT IT TOGETHER
1. Wash the potatoes but do not remove the skin, place into a saucepan and add 800ml of cold water, add two dessert spoons of Table salt and the lemon juice and cook rapidly for approximately 20 - 30 minutes
2. Leave the pan over the heat the water should have almost totally evaporated keep shaking the pan and as the water disappears the potatoes will magically frost and wrinkle, remove from heat when the pan is totally dry
3. Serve at once with the peppery Red Mojo
