Mussels with Chorizo, Cherry Tomatoes, and Frito Sauce

This is a fun, sophisticated lunch or evening meal, ready in minutes and great for sharing. Don’t forget the crusty bread, and of course the chilled Berceo wine or a few of our selected Spanish Beers.

INGREDIENTS TO GET READY
1kg Mussels
4x Cloves of Garlic smashed and Chopped
1x onion (finely chopped)
200ml Dry White Wine
100g Mixed Cherry Tomatoes cut in half
100g Iberico Belotta Chorizo (finely sliced)
250ml Frito Sauce
20g Coriander
4X Dessert spoon Extra Virgin Olive Oil
PUT IT TOGETHER
1. In a heavy-based saucepan heat the olive oil over high heat, when the oil is hot add the onions and cook for a couple of minutes without colour. Add the garlic and chorizo and cook out until the chorizo starts to bleed oil, add the tomatoes, mix well and add the mussels. Mix well and deglaze the pan with white wine. Place a lid on the pan and allow to cook for around 3 minutes shaking the pan from time to time
2. Remove the lid, the mussels should be starting to open up. Add the Frito sauce, bring to a rapid boil and serve immediately,(discard any shells which have not opened)
3. Divide the. Mussels between two serving bowls sprinkle with fresh Coriander leaves…. Delicious
