I think that virtually everybody loves a little fried Chicken and this dish is so easy to make. Experiment with different seasonings and flavours and I’m sure you will use this recipient over and over again. Don’t forget to have a fridge full of cold beers! Serves 2 for Flatbreads , 4 for Tapas Bites.

- INGREDIENTS TO GET READY
- 4x Boneless skinless Chicken Thighs (Each cut into 3)
- 100ml x Buttermilk
- 1 x Generous pinch of Sweet Paprika
- 1 x Generous pinch of Turmeric
- 1 x Tea spoon Garlic Granules
- Place all ingredients into a bowl mix well and marinade overnight
- 100g x Panko Breadcrumbs
- 50g x Polenta
- 1/2 Teaspoon Sweet Smoked Paprika
- 1 x Teaspoon Garlic Granules
- Salt and Pepper
- Mix well and place in a tray
- 2x Greek Style Flatbreads
- Tomato Salsa
- 2x Large Round Vine Tomatoes (1/4 and remove seeds)
- Minted Yoghurt
- 150ml x Thick Yoghurt
- PUT IT TOGETHER
- 1. Drain the Chicken and Place into the Breadcrumb mix shake well and ensure that all the pieces have a generous coating of crumb,carefully deep fry in hot oil at 160°c until the chicken is golden brown and crisp. Drain on kitchen paper
- 2. While the Chicken is cooking heat the Flatbreads on a griddle plate or Dry Frying Pan.
- 3. Place some Shredded salad or Coleslaw on the Flatbreads add the Chicken And Roll into thighs Cones. Enjoy with Lashings of Tomato Salsa,and Minted Yoghurt.
