A really simple and very tasty treat, which can be prepared in advance and then just popped into the oven. Using products from Spanish, Mexican and Italian cuisines to make a dish which everybody will want just a little bit more of.

- INGREDIENTS TO GET READY
- 3 x Large Flour Tortillas
- 200g Small Penne Pasta
- 40g Jalapeño Peppers (finely chopped)
- 4 x Slices cooked Ham
- 100g Grated Manchego Cheese
- 100g Diced Chorizo Vella Extra
- 150ml bottled Lasagne or Cheese pasta sauce
- Salt and Pepper
- 200ml Frito Sauce
- Oil or Butter Spray
- PUT IT TOGETHER
- 1. Take a 10 inch cake tin round or square (square is probably easier to build). Spray with butter. Place a tortilla in the tin covering the base and it should come 2/3s up the sides of the tin
- 2. In a pan of rapidly boiling salted water cook the penne till it is al dente drain in a colander but do not refresh
- 3. When the pasta has drained place into a mixing bowl season and add the pasta sauce, add the chopped chorizo, grated cheese, and diced jalapeños - mix well
- 4. Cut the two remains tortillas into strips which are the same width as the cake tin so you will be able to seal the pie
- 5. Half fill the cake tin with the pasta mix. Compress and lay the ham slices on top of the pasta, cover the ham with the remaining pasta and again compress till the tin is packed tight
- 6. Place the first strip of tortilla over the mix one side to the other and tuck down the sides repeat with the second strip to the opposite two sides.the pie should now be completely sealed
- 7. Spray the top of the pie with butter and place into a preheated oven 200c for approximately 35 /40 minutes until the pie is golden and crispy
- 8. Remove the pie from the oven and tip out onto your serving platter
- 9. Serve with hot Frito sauce
- 10. If by any chance there is any pie left over it is also delicious as a chilled mid morning or lunch time snack
